Some nights call for pasta: I’ve been solo parenting this week and last night, pasta just needed to happen. There must be studies on the healing properties of noodles somewhere? I know I’m not alone here.
Carbonara is one of my favourite pasta dishes and despite how easy it is, I don't often make it: I never really have bacon on hand and my family are not egg lovers so carbonara is a solo expedition for me. I’ve taken the opportunity of managing just myself for dinner and remixed the classic recipe with a few spring touches and I am so happy with the results.
If you are lucky enough to visit RPM Bakehouse, you should have their stunning lemon quiche that is so bright and light and delicious. This quiche was the anchor inspiration for this recipe. Adding lemon zest, asparagus and mushrooms to this dish really brightens things up and adds a bit of balance. This pasta dish takes around 20 minutes to prepare, with a handful of ingredients and a clever few tricks to get a simple, luscious, comforting pasta.
