This week my daughter turned two months old. Time is flying, and I’m just trying to keep up. One of the main things saving me right now is a very unsexy, slightly rigid but highly effective meal prep routine.
I don’t always have time to make aesthetic meals, but I can make them good. And honestly, the thing that keeps me afloat (and fed) is having a quiche on hand at all times.
Yes, quiche. I know — it sounds kind of dated, very 90s, like Frasier or sun-dried tomatoes. But hear me out: quiche deserves a comeback. It’s easy, versatile, and quite nutrient-dense.
Here’s why I love it:
It works for any meal — breakfast, lunch, dinner, or one-handed snack while rocking a baby.
It freezes beautifully and makes the perfect “what’s for dinner?” backup or a thoughtful gift for new parents.
It’s packed with protein, fat and veggies — the holy trinity of staying full and functioning.
The formula is foolproof: Once you’ve got the basics, you can remix it endlessly. We love variety but keeping things simple at the same time.
I’ve had quiche almost every day for the past two months and I’m still not sick of it. (And as a reformed leftover-hater, that says a lot.)
If you’re someone who struggles with eating breakfast or finding time for lunch, this is your sign: make a quiche.
Very Easy Quiche
